I hope this blog won’t turn into an online cook show (as pointed out by John). But what the heck, I love cooking and I think I’ll blog about my cooking. Flipped through Jamie Oliver’s cook book and saw this interesting menu on making pasta & carbonara. His version have peas, bacon and etc, which I don’t have and I’m not keen to use, hence, I improvised again. I will use onion, mushroom and white fish as substitute. For the carbonara sauce, I used thick cream and egg seasoned with salt and pepper.
I started off with slicing the onions and mushroom and fried them to get the taste and flavor out.
Next, I boiled the spaghetti. Jamie Oliver showed us in his show about how to boil/cook the spaghetti. I practiced his method and this is how it looks like.
Twist the spaghetti and drop the spaghetti into the pot like this.
As the down part of the spaghetti soften, eventually the spaghetti will slowly slide into the pot and it will look like this.
The spaghetti will curl into the pot evenly. Isn’t that cool!
As for the sauce, I mix 7 table spoons of thick cream with an egg. Seasoned with salt and pepper.
I used the Pacific West white fish fillet as my choice of fish. Fried them and sliced them into chunks and pieces.
As the spaghetti cook, drain the water off the pot and mix it with the sauce. Jamie Oliver said the heat contained in the spaghetti will cook the egg in the sauce. I mix the fish in and stir it until everything looks even.
Finally, the fried onion & mushroom and cheese (Parmesan cheese is preferred) are put on top as toppings. That’s how my version of Spaghetti Carbonara looks like.
